The salted flavor of sardines is united with fresh lemony pasta and topped with breadcrumbs for a crunch!
8 oz. DaVinci Fettuccine
4 tbsp. DaVinci Extra Virgin Olive Oil, divided
4 cloves garlic, minced
1 cup breadcrumbs
1/4 cup lemon juice
1 tsp. freshly ground pepper
1/2 tsp. salt
2 - 3, 4 oz. Reese Plain Sardines, flaked
1/2 cup fresh parsley, chopped
1/4 cup Parmesan cheese, finely shredded
Bring a large pot of water to a boil. Cook pasta according to package. Drain. Set aside.
In a small skillet, evenly coat bottom of pan with 2 tbsp. oil over medium heat.
Add garlic and cook for 20 seconds or until sizzling. Remove from heat.
Transfer garlic and oil from pan to a bowl. Set aside.
Return pan to burner; heat the remaining 2 tbsp. of olive oil on medium.
Toss in breadcrumbs to the pan. Cook 5-6 minutes or until golden brown, stirring frequently. Remove from heat and move to bowl.
In the large bowl filled with the garlic oil, whisk together lemon juice, salt and pepper to taste.
Mix in the drained pasta, sardines, parsley, and Parmesan cheese. Gently toss until evenly coated.
Garnish with breadcrumbs.
